Cheese and Onion Pasties
Cheese and onion pasties
Ingredients
900g/2lb shortcrust pastry
2 tbsp vegetable oil
450g/1lb onions, peeled and sliced
450g/1lb mature cheddar, cut into 1cm cubes
1 tsp paprika
salt and pepper
1 egg, beaten, for glazing
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Roll out the pastry and cut out 6 circles 20cm/8in in diameter.
3. Heat the oil and cook the onions in it until starting to soften. Take off the heat and cool.
4. Stir in the cheese cubes and paprika and season well. Divide the mixture between the six circles and crimp the edges together.
5. Brush with a little of the beaten egg. Put on a baking sheet and bake in the oven for 20-30 minutes until the pastry is golden. Serve hot or cold.

I would like to share a story about one of my favorite foods...cheese!
Once a week Mom and Dad would go grocery shopping, and along with other food, would buy 1 pound of cheese. They would tell all 6 of us kids not to eat the cheese, Mom needed it to make Tacos or Tostadas on the weekend for dinner. Well, I Love cheese so much that I would wait until Mom went outside to hang the clothes to dry. I would sneak to the fridge, open the pack of cheese, take a bite, and wrap it up and put it back. Days later when mom would open the pack, she would see the bite mark and Yell at me, "Linda, I told you not to eat the cheese!", I denied it each time, and this went on for years. I used to believe she had eyes on the back of her head. When I was in high school, I finally asked her, "How do you know it is me, because I always make sure that you are nowhere in sight", She told me she saw my crooked teeth marks. AHA! so then after that, I started Slicing a piece of cheese off, then put back the rest. Then she would still Yell at me "Linda, I told you not to eat the cheese!" I told "This time, there is NO WAY that you could prove it was me", she said "You're the only one that takes the cheese!"
One last cheese story, then I'm logging off, and getting to work, I mean it this time!
I went on a cruise with my mom and sister, one evening after a full course dinner, the waiter brought a dessert menu. One of the items available was a cheese sampler, so I ordered it. OMG the portions were humungous, I could only eat a little, and didn't want to waste it, so I wrapped the leftover cheeses in a napkin, and gave to mom to put in her purse till we got back to the room and I would put it on ice. I forgot, she forgot, and 2 days later, mom was smelling really funky, I had to speak up and asked if anyone else got whiff of that aroma that was lurking around us. It was then that she noticed SHE STILL HAD THE CHEESE!!!

LOL Linda you are a riot.I thought that was so funny as i was reading what you wrote about the cheese you would sneak to eat after your mom told all of you not to touch.lol.and i laughed even louder when i read about the cheese in her pocket book that you guys forgot about.hee hee hee.Thank you for making me laugh it felt so good.

After reading this recipe i decided it sounded really good and i had to make them even if i did not have onions so i added the cheese and some vegetables in place of the onions and they were excellent. Will try to make the cheese and onions pastries when i have some onions.
